Whenever Guga tries the food that hemakes he always says the same thing:
You guys it's incredible! soif you've ever wondered if Guga's foods
really are incredible,we made his bone marrow mashed potatoes.
We're gonna find out. Let me show youhow I did it
I picked up some beef soup bones at mylocal butcher for only a dollar fifty a
pound. I thought that was an amazing deal!All you need to do is add a couple of
tablespoons of salt to about a gallon ofwater. The purpose of this is to help
pull out the blood from the bones andthe marrow and give you a much whiter end
product. Just leave them in the fridgeovernight. After a good soak you can tell
that some of the blood has been pulledfrom the bones even though they still have
some meat on it. Guga says that youshould put them on the grill at 400
degrees Fahrenheit for 15 minutes butthen all the rendered fat ends up in
your grill instead of in your potatoes.I'd suggest putting them in the oven
on aluminum foil so you can catch all ofthe buttery drippings. I messed up the
shot where I was taking out the bonemarrow from the bones and I reshot it
again without soaking overnight tosee if there's a big difference. It
turned absolutely black! I recommend thatyou soak it. To remove the bone marrow all
you do is take a knife and gently cutaround the inside of the bone and it
should slide right out. Now you don't getvery much. That's one reason why I
suggested baking in the oven so you cancatch every single drop. Some say
that eating bone marrow has healthbenefits because it's made up of
collagen and other proteins, and thereare others who just enjoy the rich flavor.
Either way don't waste it. Ipeeled and boiled the potatoes until
they're fork-tender. Next Guga says toadd an entire stick of cream cheese,
which is really just an 8 ounce package.The cream cheese adds some tanginess
and richness to the potatoes. Afterthat you add some salt and pepper to
taste before you add the bone marrow. Then we smash up the
potatoes until they're the consistencythat you like. Next time, I'm going to use an
electric mixer because this smasherreally doesn't do it for me. Se wanted
to taste it we made these mashedpotatoes and we're gonna put it to the test.
Well so these are pretty good butthey're pretty rich. He used a lot of
cream cheese in his recipe and if I wereto redo this I would use milk instead,
and probably had some rosemary or someother seasonings to cut down that
richness. He's right that bone marrowreally adds something these mashed
potatoes. It's definitely worth making.
