This guac recipe is different than most guacs you'll find! If you love goat cheese and avocado, you'll love this! It is so creamy and full of flavor! Ingredients: 2 avocados 2 tbsp raw walnuts and 1 tsp of ground flax meal 2 tbsp red onion 1-2 tbsp of fresh lemon juice 1/2-1 fresh jalapeno, seeded and devined 1/4 cup goat Cheese (I used crumbles) Salt & pepper to taste --Roast the walnuts and flax meal on low heat in a pan until the walnuts are lightly browned and the flax meal is fragrant. Do not use in oil --Remove from pan and let cool. Chop walnuts once cool enough to handle --Add your avocados to a mortar and pestle, or bowl if you don't have a mortar and pestle and start mashing to break down the avocado. --Add in your onion, half of your walnuts and walnuts, half of the goat cheese, at least 1 tbsp of lemon juice, pinch or two of salt and black pepper and jalapeno if using. --Continue to mash and mix the ingredients till smooth, adding the rest of the ingredients as the guac starts to become smooth. --After all ingredients are mixed well, taste and add more salt, pepper and lemon juice if needed. Top with any extra goat cheese and walnuts left and enjoy!
